The Indian food processing consultant highlights its role in building the country’s first potato flakes plant and reshaping snack manufacturing.

INDIA – Leelaram Enterprises has drawn fresh attention in India’s food processing sector after detailing its role in setting up the country’s first potato flakes processing plant and guiding manufacturers toward more stable and efficient production methods.
Founded by industry professionals with a combined experience of more than 160 years, Leelaram Enterprises operates as a food processing consulting company with a strong focus on plant setup, modernization, and product development.
The company credits much of its impact to the work of senior food technologist Dinesh Garg, who led the establishment of the first potato flakes plant in India.
Building India’s first potato flakes plant
At the core of this milestone stands Garg’s technical leadership and hands on approach. After completing the plant setup, he developed more than 150 product applications using potato flakes and supported over 316 clients through application development, product improvement, and standardization.
These efforts helped manufacturers shift away from raw potato use. By adopting potato flakes, companies reduced water use, cut waste, and managed production costs more effectively while keeping their focus on their main product strengths.
“Potato flakes give manufacturers control over quality and consistency that raw potatoes often cannot offer,” Garg said. “Once companies see the savings in time, water, and waste handling, the shift becomes a clear business decision.”
Changing Aloo Bhujia production
One of the most visible outcomes of this shift came in Aloo Bhujia production. Garg replaced raw potato with potato flakes at Bikaji Foods International in Bikaner. After this change, the company stopped using raw potatoes for Aloo Bhujia altogether, a move that later spread across the sector.
Several leading savory producers say this change helped them manage price swings, quality issues linked to starch and sugar levels, water dependence, and waste disposal challenges.
“When we applied potato flakes at scale, the process became more predictable and easier to manage,” Garg said. “That stability matters when you run large snack lines every day.”
Expanding plant development across states
Following the first plant, Garg led the setup of several potato flakes processing plants in Maharashtra and Uttar Pradesh. These facilities continue to operate as profitable units, supported by ongoing technical input and process refinement.
